I love this recipe because you can actually taste the banana. It's plenty moist and doesn't fall apart (unless, like me, you have to eat it the second it comes out of the oven).
2 c flour
1 tsp baking soda
1/4 tsp salt
1/2 c butter
3/4 c brown sugar
2 eggs, beaten
2 1/3 c mashed overripe bananas
Combine dry ingredients. Separately, cream butter with sugar, then add eggs and bananas until well blended. Stir into dry mixture "just to moisten." Bake in greased bread pans at 350 until a toothpick inserted into center comes out clean. Let cool in pan for 10 minutes before turning out.
I baked four mini loaves for about 45 minutes and they were great. They just smelled ready & the toothpick was clean. The original recipe says 60-65 mins for a 9x5 loaf. My oven also bakes a bit hot, so whatever.
