10 oz canned chicken, drained
1 Tbs red wine vinegar
juice of 1/2 lime
1/4 c (???) water
1/2 tsp sugar
1/4 tsp salt
1/4 tsp pepper
1 green onion, chopped
1/2 tsp minced garlic
1/2 tsp dried oregano
Heat everything together in a saucepan and serve with all the fixins.
The original recipe calls for fresh chicken that you cook & keep the liquid in the pan. I didn't have any on hand, so I used canned. I didn't think about the lack of liquid and it was a bit dry, so I'm guessing on the amount of water to add next time.

Banana Bread

I love this recipe because you can actually taste the banana. It's plenty moist and doesn't fall apart (unless, like me, you have to eat it the second it comes out of the oven).
2 c flour
1 tsp baking soda
1/4 tsp salt
1/2 c butter
3/4 c brown sugar
2 eggs, beaten
2 1/3 c mashed overripe bananas
Combine dry ingredients. Separately, cream butter with sugar, then add eggs and bananas until well blended. Stir into dry mixture "just to moisten." Bake in greased bread pans at 350 until a toothpick inserted into center comes out clean. Let cool in pan for 10 minutes before turning out.
I baked four mini loaves for about 45 minutes and they were great. They just smelled ready & the toothpick was clean. The original recipe says 60-65 mins for a 9x5 loaf. My oven also bakes a bit hot, so whatever.

Pumpkin Pie

My mom said this was the best pumpkin pie she'd ever had.
1 can pumpkin (15 oz)
1 can sweetened condensed milk (14 oz)
2 large eggs
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
Preheat oven to 425. Whisk all ingredients until smooth and pour into unbaked pie crust. COVER THE EDGES OF THE CRUST WITH TIN FOIL!!! Bake 15 mins, then turn oven down to 350 and continue baking 30-35 mins more, or until a knife inserted 1 inch from crust comes out clean.

Turkey Noodle Soup
7 c water
1 Tbs chicken base
2 c sliced carrots
1/2 onion, chopped
2 celery ribs, sliced
salt & pepper to taste
3 c leftover turkey pieces
homemade noodles (1/2 the recipe)
Combine all but turkey & noodles. Bring to a boil then simmer until veggies are tender. Add turkey & cook on medium-low while you make the noodles (or just for a while). Bring back up to a boil then add noodles, a few at a time, and let them boil for just a few minutes.
Note: The water and chicken base are just stand-ins for actual turkey drippings.

My mom is famous for her post-Thanksgiving turkey noodle soup. These are the noodles she uses.

1/2 c rich milk (evaporated or just the thickest stuff you have)
2 c flour
1 tsp salt
1/2 tsp baking powder
Combine eggs & milk. Put salt & baking powder into 1/2 the flour and add to egg mixture. Mix in the rest of the flour until it becomes a pretty firm ball. The dough will be sticky. Roll out over flour and cut into strips with a pizza cutter. Drop a few at a time (so they don't stick together) into boiling water or soup. They only take a few minutes to cook.

Buttermilk Cornbread

This was my first try making cornbread and everyone raved about it. Why try anything else?
1/2 c salted butter
2/3 c white sugar
2 eggs
1 c buttermilk
1/2 tsp baking soda
1 c cornmeal
1 c flour
1/4 tsp salt
Melt butter in skillet. Remove from heat & stir in sugar. Quickly add eggs & beat until well blended. Combine buttermilk w/ baking soda & stir into butter mixture in pan. Stir in cornmeal, flour & salt until well blended & few lumps remain. Bake in greased 8x8 pan at 350 for 30 mins (use toothpick test). I think my oven cooks hot, so you might need to increase the temp or time.
Serve with honey butter. Delicious.

Devin loves this. Which is saying something, because he's a BBQ nut and pretty picky. I use the cheapity-cheapest sauce from Carl's Super Saver and so far it's always a hit.
6 frozen chicken breasts (or whatever amount)
12 oz BBQ sauce
1/2 c Zesty Italian salad dressing (low-fat seems to make no difference in taste)
1/4 c brown sugar
1 Tbs Worcestershire sauce
Place frozen chicken in slow cooker. Mix everything else and pour over chicken.
Cook covered 3-4 hrs on high or 6-8 hrs on low. I like to uncover it toward the end to let the sauce thicken.
Serve over baked potatoes with all the fixins.
