Rice & Black Beans

This was really tasty.  The combination of vinegar and thyme makes such a great, interesting taste.

olive oil for sauteing
1/2 onion, finely chopped
1 jalapeno, finely chopped

Saute until crisp-tender.  Add the following:

2 tomatoes, diced
1 can black beans, rinsed
1/2 tsp thyme
1 tsp garlic salt

Cook 3 minutes, then add the following:

3 Tbs cider vinegar

Cook 5 minutes more.  Serve over rice.
